Crispy Potato Wedges

 

Ingredients

  • 3 lb yukon gold potatoes

  • 1/2 cup avocado or olive oil

  • 1 tbsp kosher salt

  • 3/4 tsp black pepper

  • 1/2 tsp paprika

  • 3/4 tsp dried oregano

  • 4 garlic cloves, minced


Method

  1. Preheat the oven to 375°F and line a large baking sheet with foil, parchment paper, or both.

  2. Wash and scrub the potatoes to remove any dirt, then set them aside to dry completely.

  3. Slice the potatoes in half lengthwise, then slice each half into smaller pieces, and place them in a large bowl.

  4. Pour the olive oil over the potatoes in the bowl, then add the salt, pepper, paprika, oregano, and minced garlic.

  5. Toss the potatoes in the bowl until they are evenly coated with olive oil and seasonings.

  6. Spread the potatoes out evenly on the prepared baking sheet.

  7. Place the baking sheet in the oven and bake for 40 minutes.

  8. Turn the oven to broil and bake for an additional 5 minutes to crisp up the potatoes.

  9. Remove from the oven, let cool slightly, and serve. Enjoy!
