Enchilada Skillet

Ingredients

  • 1 lb ground beef (80-20)

  • 1 lb ground pork

  • 1 red onion (finely minced)

  • 1 bell pepper (small dice)

  • 1 cup fire-roasted corn (frozen)

  • 1 jar red enchilada sauce (I love the Siete brand)

  • 1 tsp garlic powder

  • 1 tsp chili powder

  • 1/2 tsp cumin

  • 1/2 tsp coriander

  • 1 tbsp salt

  • 1/2 tsp black pepper

  • 1 tbsp avocado oil (or olive)

  • 2 cups shredded cheese (mozzarella, monterey jack, cheddar, etc)

  • 15-20 corn or flour tortillas


Method

  1. Preheat your oven to 375°F. Heat a large skillet over medium heat. While the skillet is heating, prep the onion and bell pepper, then set them aside.

  2. Brown the meat: Add the pork and beef to the skillet in large chunks to ensure a good sear. Cook the first side for 3-5 minutes, or until browned, then flip and sear the other side. Once both sides are browned, start breaking the meat into smaller pieces.

  3. Season the meat: Sprinkle the garlic powder, chili powder, cumin, coriander, salt, and pepper over the meat. Stir to evenly coat the meat with the spices and cook until the meat is fully browned and cooked through. Once done, remove the meat from the skillet and set aside in a bowl.

  4. Cook the vegetables: Add the avocado oil to the same skillet. Add the onion and bell pepper, and sauté until the onion is translucent and fragrant, and the bell pepper has softened. Add the corn and continue to sauté for another 4 minutes.

  5. Combine the ingredients: Pour in the enchilada sauce and stir to combine. Then add the cooked meat back into the skillet and mix everything together.

  6. Top with cheese: Sprinkle the shredded cheese evenly over the mixture. Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the cheese is melted, bubbly, and slightly crispy on top.

  7. Cool and serve: Remove the skillet from the oven and allow it to cool for 10 minutes before serving. Serve with tortillas, fresh avocado, lime wedges, and any additional toppings you like. Enjoy!
