Mediterranean Inspired Pasta Salad

Ingredients

  • 2 cups cherry tomatoes (quartered)

  • 1 small red onion (minced)

  • 1 bunch Italian parsley (chopped)

  • 1/4 cup fresh oregano (chopped)

  • 1/2 cup pine nuts (toasted)

  • 1 cup feta cheese (crumbled)

  • 2 large handfuls of arugula

  • 3/4 cup extra virgin olive oil

  • Juice of 2 lemons

  • Salt and pepper (to taste)


Method

  1. Boil the Pasta: Fill a large pot with water, generously salt it, and bring to a boil. Once boiling, add the pasta and cook according to the package instructions.

  2. Prep: Slice the tomatoes and mince the onion. Set both aside. Finely chop the parsley and oregano.

  3. Once the pasta is done, drain it and place it in a large bowl. Add the olive oil, lemon juice, and tomatoes to the pasta. Season with salt and pepper to taste. Let this sit until the pasta has cooled to about room temperature.

  4. Assemble: Once the pasta has cooled, start assembling by adding the onion, pine nuts, arugula, and herbs. Crumble the feta over the top. Toss until everything is well incorporated.

  5. Taste and Enjoy: Taste to check the seasoning before serving at room temperature or storing in the fridge for later.
