Mediterranean Inspired Pasta Salad

Ingredients

1 lb Dry Pasta (your favorite shape will do)

2 Cups Cherry Tomatoes (sliced in quarters)

1 Small Red Onion (minced)

1 Bunch Italian Parsley

1/4 Cup Fresh Oregano

1/2 Cup Pine Nuts (toasted)

1 Cup Feta

2 Large Handfuls of Arugula

3/4 Cup Extra Virgin Olive Oil

Juice of 2 Lemons

Salt & Pepper (to taste)


Method

  1. Boil Pasta - Fill a large pot with water, generously salt and bring to a boil. Once boiling add in the pasta and cook according to the package.

  2. Prep - Slice the tomatoes and mince the onion, set both aside while finely chopping the parsley and oregano.

  3. Once the pasta is done, drain and place into a large bowl. To the pasta add the olive oil, lemon juice and tomatoes. Salt and pepper to taste. Allow this to sit until the pasta has cooled to about room temperature.

  4. Assemble - After the pasta has had time to cool start assembling by adding the onion, pine nuts, arugula, and herbs before crumbing the feta in. Toss until well incorporated.

  5. Taste and Enjoy - Taste to make sure your seasoning is spot on before serving at room temp or storing in the fridge for later enjoyment.

  • The best thing about pasta salad is the longer it sits, the better it gets. The longer the flavors sit together, the better the pasta gets so enjoying this through the week as meal prep is perfect.
