Simple Mashed Potatoes

Ingredients

  • 5 lb yukon gold potatoes, peeled

  • 1/4 cup + 2 tsp kosher salt

  • 1 1/2 cup coconut milk or milk of choice

  • 1 1/2 sticks unsalted butter

  • 4 scallions, thinly sliced

  • 1/2 tsp fresh black pepper


Method

  1. Rinse and peel the potatoes before placing them in a large pot and covering them with cold water. Place the pot over medium-low heat and bring it to a simmer. Simmer the potatoes for 30-40 minutes or until fork-tender.

  2. Strain the potatoes and allow them to sit for a few minutes to release some steam, which will help prevent watery mashed potatoes.

  3. In a small pot over low heat, melt the butter. While the potatoes are resting and the butter is melting, thinly slice the scallions.

  4. After about 10-15 minutes, the potatoes should have released most of their excess water. Transfer them to a large bowl and mash until all the large pieces are broken down. Pour in the coconut milk and stir it in slowly, then add the melted butter along with the remaining salt and pepper. Continue mashing until smooth and creamy.

  5. Top the mashed potatoes with the thinly sliced scallions and enjoy!


Notes

  • You can use a hand masher for these as I did or a hand-held or stand mixture, this is completely up to you,

  • I used the so delicious unsweetened coconut milk to reduce the amount of dairy but any milk of your choice will work great.
