Sourdough Focaccia
Ingredients
600g all-purpose flour (unbleached)
120g sourdough discard
420g water
30g olive oil + more for baking
8 grams instant yeast
16g kosher salt
1 tbsp flakey salt for topping (optional)
Method
In the bowl of a stand mixer, whisk together the water, olive oil, and sourdough discard until thoroughly combined.
Attach the dough hook to the mixer, then add the flour, salt, and yeast. Mix on medium speed for 5–8 minutes. The dough will be slightly wet, which is completely normal.
Once the dough is fully formed, scrape down the sides of the bowl. Cover the bowl and let the dough proof at room temperature for 1 hour.
After 1 hour, perform your first set of stretch-and-folds: gently pull the dough up and fold it over itself. Repeat this process four times, then cover the bowl again and let it rest for 30 minutes. Repeat this stretch-and-fold process two more times, with 30-minute rests between each set. After the final stretch-and-fold, cover the dough and let it proof for 3 hours.
Prepare a 9x13-inch (quarter-sheet) tray with parchment paper and a generous drizzle of olive oil. Turn the proofed dough out onto the prepared tray. Lightly cover with plastic wrap and let it proof for 1–2 hours, depending on your schedule.
Preheat your oven to 425°F. Remove the plastic wrap from the dough and drizzle a few tablespoons of olive oil over the top. Gently spread the oil and use your fingers to dimple the dough, being careful not to overdo it. Sprinkle with flaky salt.
Bake on the middle rack for 25–30 minutes, until the top is golden brown. If unsure, check the internal temperature; it should reach 200°F.
Allow the bread to cool for at least 30 minutes before serving to ensure the interior is not gummy. Enjoy!

What happens when you intend to make sourdough focaccia but your starter is not active enough? We use discard. Developing a sourdough discard focaccia recipe that is still super airy and bubly is something that I have been working towards and this recipe does it. It’s simple enough to not take all your attention but will still steal the show!
