Banana Bread

Ingredients

1 1/2 cup flour

1/3 cup cane sugar

3/4 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

2 ripe bananas

1 stick unsalted butter

2 eggs

1 tsp vanilla extract

1/2 cup coconut milk or milk of choice

Directions

1. Preheat oven to 350 degrees and grease a loaf pan.

2. In a large bowl sift together flour, sugar, baking powder, baking soda, salt, and cinnamon and set aside.

3. In the bowl of a stand mixture add the bananas with the whisk attachment and mix until completely smashed.

4. In a small pot add your butter to melt.

5. Add the eggs, vanilla, and coconut milk to the mixture with the bananas and combine. Once that is mixed slow the speed on the mixture to the lowest setting and pour in the melted butter.

6. Switch from a whisk attachment to a paddle attachment and then add the dry the ingredients to the wet and mix only till combined to not overmix.

7. Once all is combined add the batter to your loaf pan sprinkle some cinnamon on top and bake for 40-50 minutes or until a toothpick comes out clean.

8. Let cool for 10 minutes and then serve warm or up to 4 days after baking.
