Buffalo Cauliflower

Ingredients

  • 1 large head of cauliflower

  • 3 tbsp hot sauce (I used Yellow Bird - Blue Agave Sriracha)

  • 6 tbsp unsalted butter

  • 2 tbsp avocado oil

  • 1 tbsp kosher salt


Method

  1. Preheat your oven to 375°F and line a sheet tray with foil and/or parchment paper.

  2. Slice the end of the cauliflower before slicing it in half and removing the core. Cut the cauliflower down into little florets and place them in a large bowl.

  3. Add the hot sauce and the butter in a small saucepan. Place on low heat to melt the butter into the hot sauce. Bring to a light simmer before removing from the heat.

  4. Toss the cauliflower with the avocado oil and salt before pouring over the buffalo sauce we just made. Toss until all the cauliflower is evenly coated. Pour the cauliflower onto the sheet tray and place it in the oven to bake for 20 minutes, tossing after the first 10.

  5. After 20 minutes switch your oven to broil and broil for 5-8 minutes until a little charred and crispy. Remove the cauliflower from the oven and allow it to cool just slightly before serving. Enjoy!


Notes

  • This recipe is super easy to double or triple to make more, If you wish for more sauce cauliflower, simply make more of the buffalo sauce (hot sauce of choice and butter).

  • Meal prep this ahead of time by prepping the cauliflower and buffalo separately or completing completely and sorting in the fridge for up to 4 days.
