Ginger Ale Syrup

 

Ingredients

  • 1 1/2 cups honey

  • 1 1/2 cups water

  • 1/2 cup fresh ginger, grated

  • 4 fresh mint sprigs

  • 3 limes (juice & zest)


Method

  1. Combine the water, honey, and grated ginger in a small pot. Heat on medium-high heat and bring to a boil. Reduce the heat to medium-low and simmer for 15 minutes.

  2. After the syrup has simmered for 15 minutes, remove it from the heat and add the fresh mint. Let the syrup cool with the mint for 20 minutes.

  3. While the syrup cools, juice and zest all three limes.

  4. After 20 minutes, strain the syrup into a jar, stir in the lime juice and zest, and store in the fridge for up to two weeks.

  5. Mix three tablespoons of syrup with one cup of sparkling water or club soda and lots of ice to make the perfect ginger ale. Garnish with fresh mint, and enjoy.

 
 

Notes

  • Not only is this version of the classic soda delicious, but it also aids in digestion and is anti-inflammatory. Using honey as the main sweetener helps with seasonal allergies and aids the body rather than being packed with tons of refined sugar. Enjoy!

  • Store in the fridge for up to three weeks.
