Citrus Seared Tuna

Ingredients

Sauce:

2 grams Orange Zest

5 grams Mango Juice

25 grams Tamari

12 grams Salt

5 grams Sesame Oil

8 grams White Wine Vinegar

Tuna:

1 Tuna Steak

1/3 Cup Black Sesame Seeds

1 Tbsp Sesame oil

1 Cup Cooked Rice

Directions

1. In a bowl weigh out all of the sauce ingredients (orange zest, mango juice, tamari, salt, sesame oil, and white wine vinegar) and mix together until well combined.

 
 

2. Heat up the 1 Tbsp sesame oil in a large sauté pan. Coat the tuna in the sauce and let marinate for 5 minutes. Sprink a generous amount of sesame seeds on one side of the tuna steak.

 
 

3. Once the sesame oil is heated and covering the whole pan place the tune in the pan with the sesame seed side facing up. Sear each side for 2-3 minute depending on how well done you want your tuna. For a medium rare - rare sear I recommend 2 minutes on each side.

4. Once the tuna is seared remove from the pan and pour the remaining sauce in the pan over the rice. Slice the tuna thinly.

 
 

5. Place the rice at the bottom of a dish and layer the tune overtop. Pour over any of the extra sauce and sprinkle with salt, pepper, sesame seeds, and extra orange zest.

6. Serve and Enjoy!

 
 

Tuna should only be served up to 24 hours after being prepared for freshest taste and safest consumption.
