Classic Carbonara (Vegetarian)

Ingredients

3/4 Cup Parmesan

3 Eggs

2 Egg Yolks

2 Tbsp Buttermilk

1 Tsp Salt + 1/2 Tsp

1/4 Tsp Black Pepper

1 Tsp Olive Oil

11 0z Pasta

2 Garlic Cloves

Directions

1. In a medium bowl whisk together grated parmesan, eggs, egg yolks, buttermilk, 1 tsp salt, and pepper. This mixture should be pretty thick once combined if needed add more parmesan.

 
 

2. Place a large pot of water on to boil with a generous amount of salt. Once boiling add in pasta and cook until aldenté. Saving 1 1/2 cups of pasta water.

3. In a large skillet add olive oil and the garlic (minced) saute until fragrant on low heat. Once the pasta is done remove the skillet from heat and add the pasta. Pour the egg mixture and extra pasta water (when needed for preferred consistency) over the pasta and mix continuously until creamey.

 
 

4.Serve with extra parmesan and black pepper.
