Crispy Potatoes w/ Spiced Greek Yogurt

Ingredients

Potatoes

15 Gold Potatoes

1 Tbsp + 2 Tbsp Salt

1 Tsp Black Pepper

2 Tsp Dried Thyme

1 Tsp Sweet Paprika

Yogurt Sauce 

1/4 Cup Olive Oil

330g (about 1 1/2 cups) Plain Greek Yogurt

2 Tbsp Fresh Parsley

3 Tbsp Lemon Juice

1/4 Tsp Garlic Powder

1/2 Tsp Dried Thyme

1/8 Tsp Sweet Paprika

3/4 Tsp Salt

1/8 Tsp Black Pepper

Method

1. Fill a large pot with water, two tablespoons of salt, and the potatoes. Place on medium-high heat and boil until a fork easily goes through the potatoes, about 30-45 minutes.

 
 

2. While the potatoes are boiling, start to mix the yogurt. Combine all the ingredients for the yogurt sauce into a bowl and mix until creamy.

 
 

3. In a separate small bowl, mix the dry spice mix using the remaining potato ingredients (salt, pepper, thyme, and paprika) until combined.

4. Preheat your oven to broil. Once the potatoes are done boiling, drain, cut them in half and place them on a sheet tray. Using a potato press or a fork, smash the potatoes down until little disks are formed. Sprinkle the dry spice mix over top of the smashed potatoes before placing them in the oven to broil for 8-10 minutes or until crispy.

 
 

5. Remove the potatoes from the oven and let cool a bit before serving alongside the creamy greek yogurt sauce.

  • I think that this recipe is great because I for one get tired of potatoes quickly and this gives me a new way to add them to my table.
