Crispy Potatoes w/ Spiced Greek Yogurt

 

Ingredients

Potatoes:

  • 15 yukon gold potatoes

  • 3 tbsp kosher salt

  • 1 tsp black pepper

  • 2 tsp dried thyme

  • 1 tsp sweet paprika

Yogurt Sauce:

  • 1/4 cup olive oil

  • 1 1/2 plain greek yogurt

  • 2 tbsp fresh parsley

  • 3 tbsp lemon juice

  • 1/4 tsp garlic powder

  • 1/2 tsp dried thyme

  • 1/8 tsp sweet paprika

  • 3/4 tsp kosher salt

  • 1/8 tsp black pepper


Method

  1. Fill a large pot with water, add two tablespoons of salt, and add the potatoes. Bring to a boil over medium-high heat and cook until a fork easily goes through the potatoes, about 30-45 minutes.

  2. While the potatoes are boiling, prepare the yogurt sauce. In a bowl, combine all the ingredients for the yogurt sauce and mix until creamy.

  3. In a separate small bowl, combine the dry spices (salt, pepper, thyme, and paprika) for the potatoes. Stir until well mixed.

  4. Preheat your oven to broil. Once the potatoes are done boiling, drain them, cut them in half, and place them on a sheet tray. Use a potato masher or fork to smash the potatoes into little disks. Sprinkle the dry spice mix over the smashed potatoes. Broil for 8-10 minutes, or until crispy.

  5. Remove the potatoes from the oven and let them cool slightly before serving with the creamy Greek yogurt sauce.

  • I think that this recipe is great because I for one get tired of potatoes quickly and this gives me a new way to add them to my table.
