Spicy Tomato Shrimp

 

Ingredients

  • 2lb cleaned and cooked shrimp

  • 2 shallots, minced

  • 2 tbsp tomato paste

  • 30oz chopped tomatoes

  • 1/4 cup white wine, something you would drink

  • 2 garlic cloves, minced

  • 3 large basil leaves

  • 1 tsp lemon zest

  • 1 tbsp salt

  • 1 tsp black pepper

  • 1/2 tsp dried oregano

  • 1 tsp red chili flakes (or more!)


Method

  1. In a large sauté pan over medium-low heat, add the olive oil, tomato paste, garlic, shallot, lemon zest, salt, and pepper. Sauté until fragrant.

  2. Add the chopped tomatoes, white wine, oregano, chili flakes, and basil leaves. Bring to a light simmer, cover, and cook on low heat for 12 minutes.

  3. Once the sauce has formed, taste and adjust the seasoning with salt if needed. Add in the cooked shrimp, tossing until all the shrimp are coated in the sauce. Cover and let sit for 5-7 minutes, allowing the shrimp to warm through and the flavors to incorporate.

  4. Remove from heat and transfer to your serving dish. Serve alongside your favorite sides.

  • This is what I like to call an elevated easy dish. This dish is super simple but looks and tastes very elevated.

  • Enjoy this one with you favorite veggie, I paired mine with pine nut stuffed zucchini!
