Fried Eggplant

Ingredients

1 Large Eggplant

Salt + 1 Tsp

1 Tsp Herbs De Province

2 Eggs

1 Cup Flour

2 Cups Light Olive Oil

Your Favorite Marina Sauce To Dip In (my favorite) Rao’s

Directions

1. Wash and slice the eggplant into similar sized slices. Coat the slices in a thin layer of salt and lay them on a rack to drain. The salt will help extract the harsh bitterness that comes with the eggplant. Let this sit for 10 minutes before you rinse them off with cool water.

2. Once you rinse off the eggplant set the slices on a thin towel and let air dry for 60-80 Minutes.

 
 

3. Whisk the egg in a small bowl and place the flour in a separate bowl with 1 tsp slat and 1 tsp herbs de province.

4. Add the oil to a large shallow pan and heat the oil to 350°F - 375°F.

5. Dip each slice into the egg mixture then following by dipping each slice into the flour. Place each slice into the oil and fry each side until golden brown.

 
 

6. Once a slice is fried place it on a thin towel to absorb the extra oil.

 
 

7. Serve with your favorite marina sauce and Enjoy!
