Orange Ricotta Cake
Ingredients
2 cups unbleached all-purpose flour
1/2 cup cane sugar
3/4 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
2 eggs
1/2 cup whole milk
1/2 cup whole milk ricotta cheese
3/4 tsp vanilla
1 tbsp orange zest
1/3 cup orange juice
1/2 cup unsalted butter
Method
Preheat your oven to 350°F and grease a cake pan with cold butter.
In a large bowl, sift together the flour, salt, baking powder, baking soda, and sugar. Set aside.
In the bowl of a stand mixer, combine the eggs, milk, orange juice and zest, vanilla, and ricotta. Mix until fully combined. Slowly pour in the melted butter.
Gradually add the sifted dry ingredients to the wet ingredients, and mix using the paddle attachment. Mix gently just until everything is incorporated.
Pour the batter into the greased pan and tap it on the counter three times to release any air bubbles.
Place the cake in the oven on the middle rack and bake for 20-25 minutes, or until a toothpick or cake tester inserted into the center comes out clean.
Remove the cake from the oven and set aside to cool for 30 minutes. Once cooled, remove the cake from the pan and spread a thin layer of buttercream and top with candied oranges.
Serve and enjoy!
