Orange Ricotta Cake

Ingredients

2 Cups Flour

1/2 Cup Cane Sugar

3/4 Tsp Baking Powder

3/4 Tsp Baking Soda

1/2 Tsp Salt

2 Eggs

1/2 Cup Milk of Choice (I used almond)

1/2 Cup Ricotta Cheese

3/4 Tsp Vanilla

1 Tbsp Orange Zest

1/3 Cup Orange juice

1/2 Cup Unsalted Butter

Directions

1. Preheat your oven to 350°F and grease a cake pan with cold butter.

2. In a large bowl sift together the flour, salt, baking powder, baking soda, and sugar. Set aside.

 
 

3. In the bowl of a stand mixture combine the eggs, milk, orange juice and zest, vanilla, and ricotta. Mix until fully combined. Slowly pour in the melted butter.

4. Add the sifted dry ingredients to the wet and combine using the paddle attachment. Mix lightly just until everything is incorporated.

 
 

5. Pour the batter in the greased pan and tap on the counter 3 times to release any air bubbles.

 
 

6. Place the cake into the oven on a middle rack and let bake for 20-25 minutes or until a toothpick or cake tester comes out of the center clean.

7. Remove the cake from the oven and set side too cool for 30 minutes. Remove the cake from the pan and add a thin layer of butter cream and candied oranges.

 
 

8. Serve and Enjoy!
