Gluten Free Apple Crisp
Ingredients
Filling:
6 Apples of different varieties (your choice)
2 Tbsp Maple Syrup
4 Tbsp Almond Milk
2 Tbsp Tapioca Starch
1/4 Cup Almond Flour
1 Tbsp Vanilla Extract
1/8 Tsp Nutmeg
1/8 Tsp Allspice
1/4 Tsp Ground Clove
1/4 Tsp Pumpkin Pie Spice
1/2 Tsp Salt
1 Tsp Cinnamon
Streusel:
2 Cups Almond Flour
1 1/2 Cup Old Fashioned Oats
1/8 Cup Tapioca Starch
1/2 Cup Melted Coconut Oil
4 Tbsp Almond Milk
2 Tbsp Maple Syrup
1 Tsp Cinnamon
1 Tsp Vanilla Paste
1 Tsp Salt
Directions
1. Preheat Oven to 350°F.
2. Peel and chop (into small chunks) all six apples and add them to a large bowl. In with the apples add all the rest of the filling ingredients. Combine until all the apple chunks are coated. Set aside to soak.
3. In a separate bowl sift together the almond flour and tapioca starch for the streusel.
4. Stir in the rest of the streusel ingredients into the almond flour mixture. Combine until you get a clumpy texture.
5.In a large baking dish press about 3/4 of the streusel into the bottom of the dish. Press flat and bake for 10 minutes to set.
6. Once 10 minutes is up remove the dish from the oven and pour the apples on top of the set streusel. Spread the apples around until they cover the bottom and sprinkle the leftover streusel on top.
7. Bake for 20-25 minutes or until the apples are soft and the top is golden brown.
8. Remove from the oven and serve warm.
