Gluten Free Peach Crisp

  • 1 large white Peach

  • 1/3 cup rolled oats

  • 4 tbsp almond flour

  • 1 tbsp chia seeds

  • 1 tsp cinnamon

  • 1/2 tsp salt

  • 2 tbsp honey

  • 1 tbsp light brown sugar

Method

  1. Preheat the oven: Preheat the oven to 350°F.

  2. Prepare the peach: Peel the skin off the peach, then cut it as you would an avocado. Remove the pit, leaving two halves.

  3. Prepare the oat mixture: In a bowl, mix together the oats, almond flour, chia seeds, salt, brown sugar, and cinnamon. Once combined, add the honey and stir until well mixed.

  4. Layer the ramekins: Divide 1/4 of the oat mixture between the two medium-sized ramekins, placing it at the bottom of each.

  5. Add the peaches: Place half of a peach on top of the oat layer in each ramekin.

  6. Top with remaining oat mixture: Divide the remaining oat mixture and add a layer on top of the peaches in each ramekin.

  7. Bake: Place the ramekins in the oven and bake for 10-15 minutes, or until the top layer is golden brown.

  8. Serve: Remove from the oven and drizzle honey on top. Serve hot and enjoy!
