Gluten Free Peach Crisp
Ingredients

1 large white Peach
1/3 cup rolled oats
4 tbsp almond flour
1 tbsp chia seeds
1 tsp cinnamon
1/2 tsp salt
2 tbsp honey
1 tbsp light brown sugar

Method
Preheat the oven: Preheat the oven to 350°F.
Prepare the peach: Peel the skin off the peach, then cut it as you would an avocado. Remove the pit, leaving two halves.
Prepare the oat mixture: In a bowl, mix together the oats, almond flour, chia seeds, salt, brown sugar, and cinnamon. Once combined, add the honey and stir until well mixed.
Layer the ramekins: Divide 1/4 of the oat mixture between the two medium-sized ramekins, placing it at the bottom of each.
Add the peaches: Place half of a peach on top of the oat layer in each ramekin.
Top with remaining oat mixture: Divide the remaining oat mixture and add a layer on top of the peaches in each ramekin.
Bake: Place the ramekins in the oven and bake for 10-15 minutes, or until the top layer is golden brown.
Serve: Remove from the oven and drizzle honey on top. Serve hot and enjoy!
