Greek Beef Meatballs
Ingredients
1 lb ground beef (80-20)
1 egg
1 tbsp avocado or olive oil
1 tbsp kosher salt
1/4 tsp black pepper
1 tsp dried oregano
1/2 tsp onion powder
1/2 tsp garlic powder
Method
Preheat your oven to 375°F and line a sheet tray with foil and/or parchment paper.
In a large bowl add the ground beef, egg, salt, pepper, avocado oil, oregano, garlic powder, and onion powder.
Use your hands or a spatula to mix until fully combined. Use an ice cream scoop or weigh out each meatball to 50-60g each. Roll each meatball smooth and line on the prepped sheet tray.
Place the meatballs into the oven to bake for 15-18 minutes or until an internal temperature of 145°F-150°F.
Remove them from the oven and allow the meatballs to rest for 5-10 minutes.
Serve with rice, cucumber and tomato salad, crispy potatoes, olives etc. Enjoy!
Notes
I paired these with crispy potatoes, seared halloumi, marinated tomato salad, Kalamata olives, and tzatziki.
Prep ahead and store in the fridge for up to 4 days. Makes the perfect lunch protein.
