Perfect Pork Chops
Ingredients
4 pork loin chops (bone in - Niman Ranch are my fav!)
1 tbsp kosher salt
1 tbsp ground pepper medley (white, black, pink peppercorns)
1/2 cup unsweetened applesacue
1 tbsp molasses
1 tbsp maple syrup
1 tbsp avocado or olive oil (for the pan)
Method
Place a large cast iron or dutch oven on medium-low heat to preheat the pan.
Mix the salt and pepper into a bowl. Pat the pork chops dry and season generously with the salt and pepper on the front and back.
In a separate small bowl whisk together the applesauce, molasses, and maple syrup until combined. Brush the chops front and back with the sauce.
Drizzle the oil into the heated pan and turn the heat up to medium-high/high. Place each pork chop in the pan working in batches if needed. Cook for 3 minutes before flipping. A nice golden crust should form, flip and cook on the other side for 4-6 minutes depending on the thickness of the chops. Internal temp should be 145°F-150°F perfectly cooked. Brush more sauce on both sides of all the chops.
Turn the heat off and allow the chops to rest for 10 minutes before serving. Enjoy!
Notes
If you are working with more chops than what will fit in your pan without being crowded, sear in batches to ensure an even cook on all of them.
