Grilled Asparagus
Ingredients
2 Bunches Asparagus
2 Tsp Salt
2 Tbsp Extra Virgin Olive Oil
1 Lemon
2 Tbsp Pecorino Romano
Method
Prepare your asparagus by washing it and cutting about 2” off the bottom. Rub the asparagus with the olive oil and salt. Cut the lemon in half.
When your grill is preheated to between 375°F and 400°F place the lemon cut side down then place the asparagus on and cover for about 3 minutes to start. After 3 minutes start to rotate the vegetable every 2 minutes or so until they are fork tender and have a nice char on them. This usually takes between 8 and 10 minutes. The lemon will stay on until the asparagus is completely done on the grill.
Remove the asparagus and lemon from the heat and place the asparagus in a serving dish. Juice the lemon on the asparagus and sprinkle on the pecorino. Top with black pepper and more salt if needed before serving.

Notes
Grilling vegetables is one of my favorite ways to eat them and is one of the best ways to learn to grill. The asparagus doesn’t cook to fast so you have time to turn and flip and test it until its done to your liking. If you like it crunchy pull it sooner and if you like it a little over leave it covered for a bit longer.
