Chocolate Chip Cookie
Ingredients
2 cups flour
1 tsp salt
3/4 tsp baking soda
1/2 cup cane sugar
1/2 cup dark brown sugar
2 eggs
1 cup butter (2 sticks)
1 tbsp molasses
1 tsp vanilla paste
1 cup chocolate chips
Method
Preheat the oven to 350°F (175°C) and line 3 baking sheets with parchment paper.
Sift dry ingredients: Sift together the flour, salt, and baking soda. Set aside.
Cream the butter and sugars: In the bowl of a stand mixer fitted with the whisk attachment, add the butter, cane sugar, and brown sugar. Cream together until fluffy. Add the eggs, molasses, and vanilla paste, then mix until combined.
Combine with dry ingredients: Switch to the paddle attachment. Add half of the flour mixture and mix to combine. Add the remaining flour mixture, followed by the chocolate chips. Mix until just combined.
Chill the dough: Place the dough in the fridge for 10-20 minutes to chill.
Form dough balls: Remove the dough from the fridge and measure out 45-50g portions. Roll them into balls.
Arrange on baking sheets: Place the dough balls on the prepared baking sheets, spacing them out to allow room for expansion.
Bake the cookies: Bake for 20-25 minutes, or until golden brown. Let cool on the baking sheets for 10 minutes before transferring to a wire rack.
Storage: For storing, place the cookies in a sealed container at room temperature.
