Summer Tomato Pasta
Ingredients
Pantry
1 lb Dried Angel Hair Pasta
4 Tbsp Salt + (to taste)
Pepper (to taste)
1/4 Cup + 2 Tbsp Olive Oil
Parmesan (to top)

3 Cups Cherry Tomatoes
8 Large Basil Leaves
7 Garlic Cloves
Method
Fill a large pot with water and place on high heat to bring up to a boil. To the water, add the 4 Tbsp of salt.
While the water is coming to a boil, wash and slice the tomatoes in half. Add the tomatoes to a large serving bowl.
Finely Mince the garlic (or microplane) and thinly slice the basil. Add the garlic and basil into the bowl with the tomatoes as well as a 1/4 cup of olive oil, mix and let sit.
Once the water is boiling, add in the angel hair and once its soft enough to become fully submerged, stir and cook according to its package.
Save about a quarter cup of pasta water before draining the pasta and adding it directly into the bowl with the tomatoes, garlic, and basil. Add the remaining olive oil and mix well.
Depending on how much of the oil your pasta absorbs you may choose to add a bit more. Season with salt and pepper to taste.
Serve with some freshly grated parmesan and enjoy!

Salting pasta water is super important and is what makes or breaks a pasta dish. By salting the water you are evenly distributing the salt throughout the dish leading to a more balanced flavor.
Letting the tomato, basil, garlic, and olive oil, sit creates a deeper flavor profile that elevates this simple dish.
