Pear and Balsamic Salad

Ingredients

5-6 Cups Lettuce (use your favorite greens, i love butter lettuce, micro greens, bib, spinach, and arugula)

1/4 Cup Pine Nuts

1/4 Cup Goat Cheese

1 Pear

Extra Virgin Olive Oil (using a high quality oil will make a big difference in the flavor profile)

Balsamic Vinegar (NOT GLAZE look for a quality balsamic vinegar that does not have a bunch of additives. I hyperlinked my favorite one, it’s definitely a splurge but definitely worth it!)

Salt (to taste)

Pepper (to taste)


Method

  1. Start by preheating your oven to 350°F. Spread the pine nuts onto a sheet pan and place in the hot oven to lightly toast. These will not take long so keep a close eye on them. About 5-7 minutes depending on your oven.

  2. Core and peel the pear before thinly slicing it and setting it aside.

  3. To assemble, grab a large serving bowl and add the greens. lightly salt the lettuce before anything else. Dress the lettuce alone with the olive oil and balsamic vinegar, adjusting according to your preference.

  4. On the dressed lettuce sprinkle the toasted pine nuts, crumbled goat cheese, and some black pepper. Lightly toss before adding the sliced pear on top.

  5. Serve with your favorite main dish and enjoy!

  • This recipe is very simple and uses minimal ingredients so making sure the ingredients we are using are very good quality will help elevate the dish and bring out all the flavors.
