Lemon Arugula Salad

Ingredients

3 Heaping Handfuls of Arugula

Juice of 1 Large Lemon

Pinch of Salt

Crack of Pepper

3 Tbsp White Wine Vinegar

1/3 Cup Grated Parmesan

Directions

1. Wash the arugula until clean and lay out to dry for 4 hours in a room temperature space.

2. Place the lettuce into a large salad bowl and place in the fridge while making the dressing.

3. In a large bowl mix together the lemon juice, white wine vinegar, salt, and pepper. Whisk together until combined.

4. Remove the lettuce from the fridge and pour the dressing on. Combine gently until all the lettuce is coated. Add in the parmesan and toss softly.

5. Serve and enjoy right away!!
