Lemon Arugula Salad
Ingredients
4 heaping handfuls of arugula
juice of 1 large lemon
1 tsp kosher salt
1/4 tsp freshly cracked black pepper
3 tbsp white wine vinegar
1/3 cup grated parmesan
Method
Wash the arugula until it's clean and lay it out to dry for 4 hours in a room-temperature space.
Place the lettuce into a large salad bowl and refrigerate while making the dressing.
In a separate bowl, mix together the lemon juice, white wine vinegar, salt, and pepper. Whisk until well combined.
Remove the lettuce from the fridge and pour the dressing over it. Gently toss until all the lettuce is coated. Add in the Parmesan and toss softly.
Serve and enjoy right away!
