Caprese Pasta

Ingredients

1 Ib Farfalle Pasta

2 Cups Cherry Tomatoes (sliced)

1/2 Cup EVOO (Extra Virgin Olive Oil)

1 Large Handful Fresh Basil Leaves

4 Large Garlic Cloves

2 Cups Fresh Mozzarella Pearls

3 Tbsp Salt + (to taste)

Black Pepper (to taste)

Pecorino To Top

Method

1. Fill a large pot with water, add the 3 Tbsp of salt and place on high heat to bring to a boil.

2. In a large bowl add together sliced tomatoes, basil (chopped small), garlic (minced), salt, pepper, and EVOO mix until combine.

3. Add the pasta to the boiling water and cook until al dente ~ about 8-10 minutes. Once the pasta is done, drain and add directly to the tomato mix. Let the pasta sit for about two minutes before adding the mozzarella.

4. To serve, top with crushed pepper and pecorino, enjoy.
