Caprese Pasta
Ingredients
1 lb farfalle pasta
2 cups cherry tomatoes (sliced)
1/2 cup extra virgin olive oil (EVOO)
1 large handful fresh basil leaves
4 large garlic cloves
2 cups fresh mozzarella pearls
3 tbsp salt (plus more to taste)
black pepper (to taste)
pecorino cheese (for topping)
Method
Fill a large pot with water, add 3 tbsp of salt, and place it on high heat to bring to a boil.
In a large bowl, combine the sliced tomatoes, chopped basil, minced garlic, salt, pepper, and EVOO. Mix until well combined.
Add the pasta to the boiling water and cook until al dente, about 8-10 minutes or according to package. Once the pasta is done, drain it and add it directly to the tomato mixture. Mix and let the pasta sit to cool for about two minutes before adding the mozzarella.
To serve, top with crushed red pepper and pecorino. Enjoy!
