Pear & Lemongrass Yogurt Loaf Cake

Ingredients

  • 240g plain Greek yogurt

  • 3 eggs

  • 170g organic sugar

  • 108g avocado oil (any neutral oil will work)

  • 180g all-purpose flour

  • 2 tsp baking powder

  • 1’’ pice of fresh lemongrass

  • 1 tsp salt

  • 1/2 tsp lemongrass powder

  • 1/4 tsp vanilla

  • 2 pears


Method

  1. Preheat your oven to 350°F and brush a loaf pan with a little oil, then dust with flour.

  2. In a small pot, add the oil and lemongrass. Place on low heat and allow it to steep for 20–30 minutes so the lemongrass infuses into the oil, providing flavor for the cake.

  3. Peel and thinly slice the pears to prepare them for baking. Set aside.

  4. In a small bowl, whisk together the yogurt, egg, and vanilla until smooth. In a larger bowl, whisk the flour, baking powder, salt, and lemongrass powder until well combined.

  5. Once the oil has finished steeping, slowly pour it into the wet mixture until well incorporated. Pour the wet mixture into the dry ingredients and fold the batter together using a spatula. Once combined, fold in the pear slices.

  6. Pour the batter into the prepared loaf pan and bake for 40–50 minutes, until the center is set and the top is golden brown. Remove the loaf from the oven and allow it to cool completely before turning it out of the pan and slicing to serve. Enjoy!

 
 

Notes
  • This cake is simple and has incredible flavor. Make sure the center is completely set before removing it from the oven; otherwise, the top may fall and deflate. After 40 minutes of baking, you can open the oven to check by gently giving the center a jiggle. If the center of the loaf moves, leave it in a bit longer. However, if there’s no movement and the top is golden, your loaf is done!

  • Be careful not to overmix the batter. Mix your wet and dry ingredients separately before gently folding in the pears, and that’s it!
