Savory Crepes
Ingredients
4 Crepes (Serving size)
1 cup flour
2 tbsp unsalted butter
2 eggs
1/2 tsp salt
Fillings :
Tomato, Spinach, Eggs, and gruyere:
2 large cherry tomatoes
1 egg
3 tbsp shredded gruyere cheese
pinch of salt
1/3 cup fresh spinach
Ham, Eggs, and Cheese:
2 eggs
1/4 cup chopped ham
3 tbsp cheese of choice
Mushroom, Bell Pepper, and Eggs:
1/4 cup chopped mushrooms
1/4 cup bell pepper
2 eggs
pinch of salt

Method
Prepare the batter: In a blender, add the flour, butter, salt, and eggs. Blend on medium speed until all ingredients are combined. The batter should have a runny consistency, similar to pancake batter.
Grease the pan: Lightly grease a crepe pan with oil. Pour 1/4 of the batter onto the heated crepe pan for each crepe. Use a damp crepe wand or spatula to spread the batter evenly across the pan.
Cook the first side: Cook the crepe for 2-3 minutes. While it’s cooking, prepare your preferred filling.
Flip the crepe: Flip the crepe and pour your filling onto the flipped side. Cover and cook for another 3 minutes.
Fold and cook further: Remove the cover and fold the crepe in half. Cover again and cook for an additional 2 minutes.
Serve: After 2 minutes, uncover the crepe, fold it in half once more, then remove it from the pan and serve hot.
