Tomato and White Bean Pasta

Ingredients

1 Cup Dry Pasta (use whatever shape you like best, for this dish the smaller the better)

28oz Pureéd Tomatoes

15oz (about 1 can) Cannelloni Beans

4 Tbsp Avocado or Olive Oil

2 Tbsp Tomato Paste

4 Large Garlic Cloves

1 Tbsp Dried Basil

1 Tbsp Dried Parsley

2 Tsp Onion Powder

1/2 Cup Bread Crumbs (toasted)

1/2 Cup Fresh Parmesan Cheese

Salt (about 2-3 tbsp) and Pepper to Taste

Directions

1. In a large sauté pan, add you oil and thinly sliced garlic. Fry the garlic until golden brown, removing it from the oil once done.

2. Add the tomato paste to the hot oiled pan and stir until the paste and oil are mixed. Pour in the dry pasta and allow to toast on medium low heat for 5 minutes, stirring constantly.

3. Slowly pour in the puréd tomatoes as well as the fried garlic, basil, parsley, salt (2 tbsp), pepper, and onion powder, mix until combined. Cover and let simmer on low heat until the pasta becomes altenté, about 10-12 minutes, stirring every 4 minutes.

 
 

4. Once the pasta is just about done, add in the beans and parmesan as well as more salt and pepper as you see fit. Let simmer for an additional 5 minutes before removing from heat and serving.

 
 

5. To serve, add your desired amount of pasta to a bowl and top with the toasted bread crumbs, freshly grated parmesan, and a drizzle of your best olive oil, Enjoy!
