Blueberry Muffins
Ingredients
2 Cups Flour
1/2 Cup Cane Sugar
2 Tsp Baking Powder
1/2 Tsp Baking Soda
1/2 Tsp Salt
2 Eggs
1 Cup Almond Milk
2 Tbsp Vanilla Yogurt
1/4 Cup Lemon Juice
4 Tbsp Unsalted Butter
1/2 Tsp Vanilla Extract
1/2 Cup Frozen Blueberries
Directions
1. Preheat oven to 350°F
2. In a bowl sift together flour, sugar, salt, baking soda, and baking powder. Set aside
3. With the whisk attachment fitted on the stand mixture add in the eggs, vanilla, lemon juice, yogurt, almond milk and melted butter. Mix until well combined.
4. Once the wet ingredients are mixed slowly add in the flour mixture. Only mix until smooth.
5. With a spatula fold in the blueberries.
6. Line a muffin tin and fill each about 2/3rds of the way full.
7. Place in the oven and bake for 20-25 until golden and fluffy.
8. Serve warm and enjoy!
