Carrot Cake
Ingredients
Cake:
2 eggs
1/2 cup light brown sugar
1/3 cup fine cane sugar
1/4 cup + 2 tbsp olive oil (6 tbsp)
1/3 cup unsweetened applesauce
1 tsp white vinegar
1 tsp vanilla paste
1 cup all-purpose flour
1 tsp baking powder
1 tsp kosher salt
1 tsp ground cinnamon
1/4 tsp ground nutmeg
2 medium sized carrots
3/4 cup chopped walnuts (optional)
Cream cheese Frosting:
3 tbsp unsalted butter (soften)
4 oz cream cheese
2 1/2 cups powdered sugar
1 tsp vanilla bean paste
Directions
Preheat your oven to 350°F. Grease an 8” cake pan with butter and lightly dust it with flour. Set aside. Wash, peel, and grate the carrots, then set them aside.
In a medium bowl, whisk together the eggs, olive oil, applesauce, vinegar, vanilla paste, brown sugar, and cane sugar until smooth. In a separate bowl, sift together the flour, baking powder, salt, cinnamon, and nutmeg.
Fold the dry ingredients into the wet ingredients until just combined. Gently fold in the grated carrots and chopped walnuts.
Pour the batter into the prepared cake pan and smooth the top with an offset spatula. Tap the pan on the counter a few times to release any air bubbles.
Place the cake in the oven and bake for 40-50 minutes, or until the top is a deep golden brown and a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 15 minutes before turning it out onto a plate. Allow the cake to cool completely, at least 1 hour.
While the cake is cooling, make the frosting. In the bowl of a stand mixer, beat together the butter and cream cheese until light and fluffy. Gradually add 1 cup of powdered sugar at a time, mixing until the frosting comes together.
Once the cake has cooled completely, frost it by spreading the cream cheese frosting on top or piping it on.
Serve with tea or coffee and enjoy!
