Chicken Burgers
Ingredients
2 pounds ground chicken
1 large green bell pepper, diced
3 tablespoons minced red onion
2 red chiles, minced
4 cloves garlic, minced or microplaned
Juice of 1.5 limes
1/2 cup chopped fresh cilantro
1 tablespoon salt
Black pepper, to taste
8 slices pepper jack or cheddar cheese
8 burger buns
Guacamole, chips, fries (to serve with the burgers)
Method
In a large bowl, combine the bell pepper, onion, chiles, garlic, cilantro, lime juice, salt, and pepper. Mix well.
Place a large skillet over low heat. Prepare a sheet pan with parchment or foil and preheat your oven to 350°F.
Add the ground chicken to the bowl with the vegetable mixture. Using your hands or a spatula, mix thoroughly to ensure even distribution.
Form the mixture into 8 patties, each weighing about 0.25 to 0.30 pounds. Add about 1 tablespoon of oil (avocado or olive) to the heated skillet and turn the heat up to medium high. Cook as many patties as will fit. Cook for 4 minutes, then flip and cook for an additional 3 minutes on the other side. Repeat until all the patties are cooked.
Once all patties are cooked, place them back on the sheet pan and top with cheese. Place the tray to the preheated oven for 2 minutes, or until the cheese is melted.
Remove the patties from the oven and serve on a bun with guacamole, chips, fries, or your favorite sides. Enjoy!

These are incredibly easy to make and are one of my favorite weeknight dinner options. Serve them with simple guacamole and sweet potato fries for a delicious meal! Enjoy!
