Apple Buckle

Ingredients

Cake:

  • 1 1/3 cups all-purpose flour

  • 3/4 cup fine cane sugar

  • 3/4 tsp salt

  • 1/2 tsp baking powder

  • 1/4 tsp baking soda

  • 1 tsp cinnamon

  • 1/2 cup milk

  • 1/2 cup (1 stick) unsalted butter, melted

  • 1 tbsp vanilla extract

  • 1 eggs

  • 2 large apple (such as Fuji, Honeycrisp, or Gala)

Streusel:

  • 1/4 cup usdalted butter, room temprture

  • 3 tbsp all-purpose flour

  • 1 tbsp fine cane sugar

  • 1/4 tsp salt

  • 1/4 tsp cinnamon

  • 1/8 tsp nutmeg


Method

  1. Preheat your oven to 350°F and grease an 9-inch square baking dish with butter.

  2. In a medium-sized bowl, whisk together the egg, milk, vanilla, and melted butter. Once combined, whisk in the sugar. Add the flour, baking powder, baking soda, cinnamon, and salt, mix using a spatula until smooth. Set aside.

  3. Prepare the apples by peeling and coring them. Slice into thin slices and set aside.

  4. For the streusel, add the butter, flour, sugar, salt, cinnamon, and nutmeg to a small bowl. Using your hands, mix until a crumble forms.

  5. Pour the batter into the prepared dish. Using an offset spatula, smooth the batter until even. Place the apple slices on top of the cake batter in any arrangement you desire. Sprinkle the streusel topping over all the apples.

  6. Place the buckle in the oven and bake for 45 minutes, until the top is golden brown and the center is set.

  7. Allow the buckle to cool before slicing and serving alone or with a scoop of vanilla ice cream.

 
 

Notes
  • In my research, I found that buckles can be made in many different ways. After testing three recipes, I believe this one to be the best. Remember, dishes can mean different things to different people, and everyone can make them differently—that’s what makes food so fun! So enjoy my version of an apple buckle, and happy FALL!
