Yogurt Plum Cake

Ingredients

Cake:

  • 175g unsalted butter, softened

  • 3 eggs

  • 1 tsp vanilla extract

  • 1/4 tsp almond extract

  • Zest of 1 lemon

  • 175g cane sugar

  • 130g plain Greek yogurt

  • 200g all-purpose flour (unbleached)

  • 1/2 tsp salt

  • 1/2 tsp baking powder

  • 1/4 tsp baking soda

  • 3 plums

Topping:

  • 2 tbsp cane sugar

  • 2 tbsp flour

  • 1 tsp lemon juice


Method

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch cake pan with unsalted butter and dust it with flour. Set aside.

  2. In a large bowl, combine the sugar and lemon zest. Use your hands to work them together, releasing the lemon oils into the sugar. Whisk in the softened butter until smooth.

  3. Add the eggs one at a time, mixing until fully combined. Then, pour in the vanilla extract, almond extract, and yogurt, whisking until smooth.

  4. Sift the flour into the bowl with the wet ingredients. Using a spatula, gently fold the flour into the batter until about 90% incorporated. Add the baking powder, baking soda, and salt, and finish folding until the batter is smooth and creamy.

  5. Prepare the plums by slicing them around the pit and removing it to create two halves. Slice each half into three wedges. In a small bowl, mix together the topping ingredients.

  6. Scoop or pour the batter into the prepared cake pan. Use an offset spatula to smooth the batter, then tap the pan on the counter twice to release any air bubbles.

  7. Coat each slice of plum in the topping mixture before arranging them on top of the batter, pressing them in slightly. Use as many slices as desired; if your plums are larger, you may have a few slices left over.

  8. Sprinkle the remaining topping over the cake, then place it in the oven to bake for 35-40 minutes, or until the edges are golden brown, the plums are slightly gooey, and a cake tester or toothpick comes out clean.

  9. Remove the cake from the oven and allow it to cool completely before serving, either alone or with vanilla ice cream. Enjoy!
