Gluten Free Shortbread
Ingredients
1 1/2 cup Almond Flour
1/2 cup White Rice Flour
1 cup Unsalted Butter
1 cup Powdered Sugar
1 tsp Vanilla
1/2 tsp baking powder
1/2 tsp Salt
Method
In a large bowl, beat butter and sugar until creamy, 2-3 minutes.
In a separate bowl, sift together almond flour, rice flour, salt, and baking powder.
Once the butter and sugar are creamed, add the vanilla.
Slowly add the dry ingredients to the butter mixture and beat until a dough forms.
Form the dough into a ball and place in the refrigerator for 20-30 minutes.
Preheat oven to 350°F and line a cookie sheet with parchment paper.
Roll out the dough and cut into desired shape and size, making sure they are all even.
Bake for 10-15 minutes, just before the cookies turn golden.
Let the cookies cool and harden for 10-20 minutes before serving.
Serve with a hot cup of coffee or tea and enjoy!
