Gluten Free Shortbread

Ingredients

1 1/2 cup Almond Flour

1/2 cup White Rice Flour

1 cup Unsalted Butter

1 cup Powdered Sugar

1 tsp Vanilla

1/2 tsp baking powder

1/2 tsp Salt

Directions

1. In a large bowl beat butter and sugar until creamy 2-3 minutes.

2. In a separate bowl sift almond flour, rice flour, salt, and baking powder.

3. Once the butter and sugar is creamed add the vanilla.

4. Slowly add the dry ingredients in to the butter and beat until a dough forms.

5. Form the dough into a ball and place in the refrigerator for 20-30 minuets.

6. Preheat oven to 350° and line a cookie sheet with parchment.

7. Roll out the dough and cut into desired shape and size making sure they are all even.

8. Bake for 10-15 minutes just before the cookie turns golden.

9. Let the cookie cool and harden for 10-20 minutes before serving.

10. Serve with a hot cup of coffee or tea and enjoy!
