Mint Pistachio Pesto
Ingredients
4 cups fresh basil
1/2 cup fresh mint
1/2 cup oven roasted pistachios
1/2 cup olive oil
2 blanched garlic cloves
1/2 tsp chili flakes
2 1/2 tsp kosher salt
Method
In the bowl of a food processor, combine the basil, pistachios, mint, salt, pepper, chili flakes, and garlic. Process until smooth.
Once smooth, slowly add in the olive oil, blending until fully incorporated. Divide the pesto into jars for refrigeration or freezing.
Enjoy it right away or save it for later! :)
