Pesto
Ingredients
3 cups fresh basil leaves
3 garlic cloves
1 tbsp kosher salt
1 1/4 cup olive oil
1/2 tsp black pepper
1/2 cup toasted pine nuts
Method
In a small pot, add the peeled garlic cloves and cover with cold water. Place on medium heat and bring the water to a boil to blanch the garlic. Once it boils, discard the water and repeat the process twice.
Add the basil, blanched garlic, oil, salt, pepper, and pine nuts to a blender. Blend on high until creamy.
Remove the pesto from the blender and add it to your favorite dish. Pasta is a go-to for me!
