Pesto

 

Ingredients

  • 3 cups fresh basil leaves

  • 3 garlic cloves

  • 1 tbsp kosher salt 

  • 1 1/4 cup olive oil 

  • 1/2 tsp black pepper 

  • 1/2 cup toasted pine nuts 


Method

  1. In a small pot, add the peeled garlic cloves and cover with cold water. Place on medium heat and bring the water to a boil to blanch the garlic. Once it boils, discard the water and repeat the process twice.

  2. Add the basil, blanched garlic, oil, salt, pepper, and pine nuts to a blender. Blend on high until creamy.

  3. Remove the pesto from the blender and add it to your favorite dish. Pasta is a go-to for me!

  4. Serve and enjoy!
