Spice Cake

Ingredients

120g (1 Cup) Spelt Flour

120g (1 Cup) Einkorn Flour

1 Tsp Baking Soda

3/4 Tsp Baking Powder

1 Tsp Salt

1/4 Tsp Cinnamon

1/8 Tsp Clove

1/8 Tsp Cardamom

1 Cinnamon Stick

1 1/2 Tsp Orange Zest

1/2 Cup Light Brown Sugar

1/2 Cup Unsalted Butter

2 Eggs

3/4 Cup Milk of Choice (I used almond milk)

1 Tsp Vanilla Bean Paste

Directions

1. Preheat oven to 350°F. Grease your pan of choice with coconut oil or layer with parchment paper. (I used mini bundt pans that were made of parchment)

2. In a large bowl sift together spelt flour, einkorn flour, baking soda, baking powder, salt, clove, cardamom, and cinnamon. Set aside.

3. In a small pot add the butter, orange zest, vanilla paste, and the cinnamon stick. Place on low heat and cover. Once melted stir and let the mixture come to a light simmer. Remove from heat and let cool for 3 minutes. (remove the cinnamon stick as well)

 
 

4. In a large bowl add the eggs, brown sugar and milk - whisk until combined. Slowly pour in the butter mixture and whisk until the sugar has dissolved.

 
 

5. Slowly add the flour mix, to the wet ingredients and whisk only until combined. Once well mixed place in your desired pan.

 
 

6. Place on a middle rack in the oven and bake for 20-25 minutes, depending.

 
 

7. Remove from the oven. Let cool until warm. Serve and Enjoy!
