Spice Cake

 

Ingredients

  • 120g (1 cup) spelt flour

  • 120g (1 cup) einkorn flour

  • 1 tsp baking soda

  • 3/4 tsp baking powder

  • 1 tsp salt

  • 1/4 tsp cinnamon

  • 1/8 tsp clove

  • 1/8 tsp cardamom

  • 1 cinnamon stick

  • 1 1/2 tsp orange zest

  • 1/2 cup light brown sugar

  • 1/2 cup unsalted butter

  • 2 eggs

  • 3/4 cup milk of choice (I used almond milk)

  • 1 tsp vanilla bean paste


Method

  1. Preheat the oven to 350°F. Grease your pan of choice with coconut oil or line it with parchment paper (I used mini bundt pans made of parchment).

  2. In a large bowl, sift together spelt flour, einkorn flour, baking soda, baking powder, salt, clove, cardamom, and cinnamon. Set aside.

  3. In a small pot, add the butter, orange zest, vanilla paste, and cinnamon stick. Place on low heat and cover. Once melted, stir and let the mixture come to a light simmer. Remove from heat and let cool for 3 minutes (don’t forget to remove the cinnamon stick).

  4. In a large bowl, add the eggs, brown sugar, and milk. Whisk until combined. Slowly pour in the butter mixture and whisk until the sugar has dissolved.

  5. Slowly add the flour mixture to the wet ingredients, whisking only until combined. Once well mixed, transfer the batter to your desired pan.

  6. Place the pan on the middle rack of the oven and bake for 20-25 minutes, depending on your pan size.

  7. Remove from the oven and let cool until warm. Serve and enjoy!
