Pumpkin Muffins

Ingredients

1 1/2 Cup Flour

3/4 Tsp Baking Soda

3/4 Tsp Baking Powder

3/4 Tsp Salt

1/2 Tsp Pumpkin Pie Spice

1/4 Tsp Allspice

2 Eggs

1/4 Cup Milk (of choice)

1/2 Cup Unsalted Butter (melted)

1/4 Tsp Vanilla Paste

1/2 Cup Pumpkin Purée

1/3 Cup Cane Sugar

1/3 Cup Light Brown Sugar

Directions

1. Preheat oven to 350°F and line a muffin tin with parchment liners.

2. Sift together the flour, baking soda, baking powder, pumpkin pie spice, allspice, and salt.

 
 

3.In a large bowl whisk together the almond milk, vanilla, eggs, and pumpkin. Once combined whisk in the melted butter, cane sugar, and brown sugar.

4.Slowly start to add the flour mix to the wet ingredients. Mix only until combined.

 
 

5. Using an ice cream scoop fill the muffin tin. Bake for 20-25 minutes or until a toothpick or cake tester comes out clean.

6. Remove from the oven and let cool.

 
 

7. Serve and Enjoy!
