Pumpkin Muffins

 

Ingredients

  • 1 1/2 cup unbleached all-purpose flour

  • 3/4 tsp baking soda

  • 3/4 tsp baking powder

  • 3/4 tsp kosher salt

  • 1/2 tsp pumpkin pie spice

  • 1/4 tsp allspice

  • 2 eggs

  • 1/4 cup milk (of choice)

  • 1/2 cup unsalted butter, melted

  • 1/4 tsp vanilla paste

  • 1/2 cup pumpkin purée

  • 1/3 cup cane sugar

  • 1/3 cup light brown sugar


Method

  1. Preheat the oven to 350°F and line a muffin tin with parchment liners.

  2. Sift together the flour, baking soda, baking powder, pumpkin pie spice, allspice, and salt.

  3. In a large bowl, whisk together the almond milk, vanilla, eggs, and pumpkin until well combined. Then, whisk in the melted butter, cane sugar, and brown sugar.

  4. Gradually add the dry flour mixture to the wet ingredients, mixing until just combined.

  5. Using an ice cream scoop, fill the muffin tin with the batter. Bake for 20-25 minutes or until a toothpick or cake tester comes out clean.

  6. Remove from the oven and let the muffins cool.

  7. Serve and enjoy!
