Rustic Mashed Potatoes

Ingredients

1.5 lb Red Skin Potatoes

3/4 Cup Coconut Milk (milk of choice)

1/2 Stick Salted Butter

1 Tsp Herbs de Provence

1/2 Tsp Thyme

Salt + Pepper to Taste + 1 Tbsp Salt

Directions

1. Start by washing and drying the potatoes. Using a sharp knife create 2 half inch slits in the center of each potato.

2. Place a pot of cold water on medium heat. Add 1 tbsp of salt into the water, add the potatoes.

3. Let the water come to a boil with the potatoes in it. Once boiling reduce heat to low and cook for 20-30 minutes or until you can easily smash the potatoes.

4. Strain the potatoes from the water and place them into a large bowl. Lightly mash them, add in the butter and milk. Using an immersion blend, blend the potatoes until creamy.

5. Stir in the salt, pepper, thyme, and herbs de provence.

6. Serve warm and Enjoy!
