Almond Sugar Cookies

Ingredients

Cookie:

  • 1 cup sugar

  • 3 cups flour

  • 1/2 tsp salt

  • 2 tsp baking powder

  • 1 cup unsalted butter, softened

  • 1 egg, room temperature

  • 1 tbsp milk (of choice)

  • 1 tsp almond extract

  • 1 tsp vanilla paste

Glaze:

  • 1/2 cup powdered sugar

  • 1-2 tbsp preferred milk


Method

  1. In the bowl of a stand mixer, cream together the butter and sugar until smooth. Add in the vanilla, almond extract, and eggs, and mix until combined.

  2. In a separate bowl, mix together flour, baking powder, and salt. Slowly add the flour mixture to the butter mixture and combine until a thick dough has formed.

  3. Refrigerate for 30-60 minutes. Cut the dough into quarters and roll each portion out on a floured surface. Use preferred cookie cutters to create shapes.

  4. Preheat oven to 350°F.

  5. Place cut cookies on a sheet pan lined with parchment paper and bake for 9-11 minutes, until set and just before golden brown. Let the cookies cool and set for at least 1 hour before frosting.

  6. For the glaze, mix the powdered sugar and milk together, stirring and adding more milk if needed until there are no clumps. Dip the front of each cookie into the glaze and top with your favorite sprinkles.

  7. Let the frosting dry for about 30 minutes.

  8. Plate and serve. Enjoy!
