Simple Banana Bread

Ingredients

  • 2 very ripe bananas

  • 3/4 cup maple syrup

  • 1/4 cup avocado oil

  • 1/2 cup milk

  • 2 eggs

  • 2 tsp vanilla extract

  • 2 1/2 cups einkorn flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp ground cinnamon

  • 3/4 tsp salt


Method

  1. Preheat your oven to 350°F. Grease a loaf pan with a little avocado oil or butter and line it with parchment.

  2. In a large bowl mash the 2 bananas. Add the egg, maple syrup, avocado oil, milk, and vanilla, and whisk to combine.

  3. In a separate bowl sift together the flour, baking powder, baking soda, cinnamon, and salt.

  4. Slowly whisk the flour mix into the wet ingredients and mix only until combined.

  5. Pour the batter into the prepped loaf pan and place in the preheated oven to bake for 45-55 minutes or until golden and set. A toothpick should come out just clean.

  6. Allow the bread to cool for 20 minutes before serving. Enjoy!


Notes

  • Einkorn flour is much easier to digest than regular all-purpose flour. It is the purest grain you can get without milling your own, and I love the nutty flavor it adds to any baked good.

  • Sub out enikorn for all-purpes by reducing the flour to 2 cups.

  • Add any nuts or seeds you like to make this your own.
