Vegetarian Caesar Salad

Ingredients

1 Head of Fresh Red Leaf Lettuce

Dressing:

1/2 Cup Olive Oil

1/3 Cup Parmesan Cheese

1 Tsp Kosher Salt

Juice of 1 Medium Lemon

1/2 Tsp Cracked Black Pepper

Croutons

3 Large Pieces of Fresh Sourdough

2 Tbsp Extra Virgin Olive Oil

1/2 Tsp Salt

1/2 Tsp Onion Powder

Fresh Cracked Pepper

Directions

1. In a blender add olive oil, parmesan, salt, pepper, and lemon. Blend on high until thick and creamy. If it becomes to thick add a little more olive oil. Set aside.

 
 

2. Preheat oven to broil. In a bowl mix the crouton ingredients - EVOO, salt. pepper, and onion powder and mix together.

 
 

3. Cut the bread into small bite sized cubes and toss them in the olive oil mix until well coated.

 
 

4. Place croutons under the broiler for 3-5 minutes tossing and flipping every minute. Remove from oven, set aside.

 
 

5. Wash and chop the lettuce and add to your desired size bowl. Add a little bit of the dressing some croutons and toss.

 
 

6. Serve and Enjoy!
