Vegetarian Caesar Salad
Ingredients
1 large head fresh red leaf lettuce
Dressing:
1/2 cup olive oil
1/3 cup parmigiano reggiano cheese
1 tsp kosher salt
1 lemon, juiced
1/2 tsp cracked black pepper
Croutons:
3 large pieces of fresh sourdough
2 tbsp extra virgin olive oil
1/2 tsp salt
1/2 tsp onion powder
fresh cracked pepper (to taste)
Directions
1. In a blender add olive oil, parmesan, salt, pepper, and lemon. Blend on high until thick and creamy. If it becomes to thick add a little more olive oil. Set aside.
2. Preheat your oven to broil. In a bowl mix the crouton ingredients - EVOO, salt. pepper, and onion powder and mix together.
3. Cut the bread into small bite sized cubes and toss them in the olive oil mix until well coated.
4. Place croutons under the broiler for 3-5 minutes tossing and flipping every minute. Remove from the oven, set aside.
5. Wash and chop the lettuce and add to your desired bowl. Add the the dressing along with some croutons and toss.
6. Serve and Enjoy!
