Chocolate Muffins

Ingredients

  • 1 1/2 cups flour

  • 1/2 cup sugar

  • 1/2 cup unsweetened cocoa powder

  • 3/4 tsp baking powder

  • 1/2 Tsp Baking soda

  • 1/2 tsp salt

  • 1/2 cup milk, of choice

  • 1/4 cup unsalted butter

  • 2 eggs

  • 1/2 tsp vanilla paste

Directions

  1. Preheat your oven to 350°F and line a muffin tin with parchment liners.

  2. In the bowl of a stand mixture add the eggs, vanilla, almond milk, and melted butter. Mix until combined and set aside.

  3. Sift together the flour, sugar, baking powder soda, salt, and cocoa powder in a large bowl.

  4. Add the dry ingredients to the wet mixture and combine using the paddle attachment. Only mix until combined to prevent overmixing.

  5. Fill the muffins up to the top of the liners and place them in the preheated oven to bake for 15-20 minutes.

  6. Remove muffins from oven and let cool for 5 minutes then serve warm and Enjoy!
