Chocolate Muffins
Ingredients
1 1/2 Cup Flour
1/2 Cup Sugar
1/2 Cup Unsweetened Cocoa Powder
3/4 Tsp Baking Powder
1/2 Tsp Baking soda
1/2 Tsp Salt
1/2 Cup Almond Milk
1/4 Cup Unsalted Butter
2 Eggs
1/2 Tsp Vanilla Paste
Directions
1.Preheat oven to 350° and line a muffin tin with parchment liners.
2.In the bowl of a stand mixture add the eggs, vanilla, almond milk, and melted butter. Mix until combined and set aside.
3.Sift together the flour, sugar, baking powder and soda, salt, and cocoa powder into a large bowl.
4.Add the dry ingredients into the wet mixture and combine using the paddle attachment. Only mix until combined to prevent overmixing.
5.Fill the muffins 2/3rds of the way and place into the preheated oven for 15-20 minutes.
6.Remove muffins from oven and let cool for 5 minutes then serve warm and Enjoy!
