Cinnamon Sugar Muffins

Ingredients

  • 1 1/2 cups unbleached all-purpose flour

  • 1/2 cup fine cane sugar

  • 1 tsp salt

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1 tsp cinnamon

  • 1/8 tsp allspice

  • 2 eggs

  • 1/2 cup plain Greek yogurt

  • 1/2 cup unsalted butter, melted

  • 3/4 cup whole milk

  • 3 tbsp maple syrup

  • 1 tsp white vinegar (or lemon juice)

  • 1 tsp vanilla bean paste

  • Topping: 1 tbsp cinnamon and 1/4 cup cane sugar

Method

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with parchment liners.

  2. In a small saucepan over low heat, melt the butter. Remove the butter from the heat and allow it to cool.

  3. While the butter is cooling, combine the flour, baking soda, baking powder, salt, cinnamon, and allspice in a bowl. Whisk until fully combined.

  4. In a separate large bowl, whisk together the eggs, milk, yogurt, maple syrup, vinegar, and vanilla until smooth. Once combined, whisk in the butter and sugar.

  5. Pour the flour mixture into the wet ingredients and mix only until smooth and combined. Fill each muffin cup a little more than 3/4 full; the batter should yield 12 muffins.

  6. Bake for 15-20 minutes, or until the centers are set and just slightly golden brown. Remove the muffins from the oven.

  7. Prepare the sugar topping by mixing together the sugar and cinnamon. While the muffins are still hot, carefully dip each muffin top into the cinnamon-sugar mixture, coating the top evenly. Repeat with each muffins.

  8. Set the muffins aside to cool completely. Serve and enjoy!


Notes
  • Trust me, I know the vinegar sounds weird and out of place, but it adds just the right amount of tang to balance out all the flavors and is key to the best outcome. You can use lemon juice as it is an acid, however I did not want my muffins to taste at all lemony. Do as you wish and make them your own.
