Carrot Orange Loaf

Ingredients

2 Cups Flour

1/2 Cup Cane Sugar

1/2 Tsp Salt

1/2 Tsp Baking Soda

2 Tsp Baking Powder

1/8 Tsp Ground Cloves

1/4 Cup Light Brown Sugar

1 Cup Coconut Milk

2 Eggs

1/2 Tsp Vanilla

1/2 Tsp Orange Zest

1/2 Cup Melted Butter

1 Heaping Cup Shredded Carrots

Directions

1. Preheat the oven to 350°F and grease a loaf pan with cold butter.

2. In a large bowl sift together the flour, baking powder, baking soda, salt, cane sugar, and ground cloves. Set aside.

 
 

3. In the bowl of a stand mixer whisk the eggs, coconut milk, brown sugar, vanilla, and butter until smooth.

 
 

4. Slowly add in the flour mixture into the wet ingredients and combine using a spatula. fold in the shredded carrot and mix well.

 
 

5. Add the batter into the greased loaf pan and place on a middle rack in the oven. Bake for 40-60 minutes depending on your oven. Once a cake tester or toothpick comes out clean remove from the oven and let cool completely.

 
 

6. Once cooled slice, serve, and enjoy!
