Lemon Curd

Ingredients

6 eggs

1/2 cup honey

Juice of one lemon

Zest of one lemon

2 tsp vanilla

1/2 cup melted coconut oil

Directions

1. In a large saucepan over low heat add eggs, honey, and lemon zest and mix until combined

2. Once combined add lemon juice, coconut oil and vanilla stir continuously until thickened.

3. Once thickened pour into a sealable jar and let cool with no lid for 30 minutes.

4. After the lemon curd is cooled, seal tightly with a lid and place in the fridge.

5. For freshest taste keep up to 2 weeks.
