Lemon Orange Biscotti

Ingredients

2 Cups + 4 Tbsp Flour

3/4 Cup Sugar

1/2 Tsp Salt

1 1/2 Tsp Baking Powder

2 Eggs

4 Tbsp Unsalted Butter

Lemon ~ Yellow

1 Tbsp Lemon Juice

1/2 Tsp Lemon Zest

1/8 Tsp Yellow Coloring

Orange ~ Orange

1 Tbsp Orange Juice

1/2 Tsp Orange Juice

1/8 Tsp Orange Coloring

Directions

1. In the bowl of a stand mixture, cream together the butter and sugar before adding in the eggs.

2. Sift in the flour, baking powder, and salt. Mix until combined. Once combined, divide your dough in half and add one half back into the mixture. Add in the rest of the ingredients for the lemon dough (lemon juice, lemon zest, yellow coloring) and combine. Once the yellow dough is complete, move onto the orange dough and complete the same steps.

3. Once both doughs are complete, refrigerate them each for 30-50 minutes.

4. Remove from the fridge and roll each dough out separately into a long, wide rectangle. Place the orange dough down first before placing the lemon dough on top of the orange and rolling them together the create a spiral (like cinnamon rolls). Refrigerate once more for about 30 minutes.

5. Preheat oven to 350°F and line a baking sheet with parchemnt paper. Remove the dough from the fridge and press into a flat rectangle. Place the biscotti into the oven and bake for 30 minutes. Remove from the oven and let cool for 30 more minutes. Once cooled, slice the cookies on a diagonal line. Place the biscotti cut side up and bake for an additional 12 minutes.

6. Remove from oven, let cool completely, enjoy!
